The vines of Pascal Jolivet grow in in the Loire Valley at an altitude of about 200 to 350 meters in a climate that is clearly continental, but also benefits from the Atlantic influences and the proximity of the Loire River, which creates a very special microclimate. The diverse soil formations characterize the mineral and at the same time very fragrant, elegant character of the wines of Pascal Jolivet. Domaine Pascal Jolivet is one of the youngest and most dynamic wineries in the Loire Valley. The eight-hectare Pascal Jolivet estate was created in 1987, in the communes of Tracy and Les Loges. Today, Pascal Jolivet’s total holdings cover over 120 hectares of vines between Sancerre and Pouilly Fumé,which are now farmed organically, and 60 hectares in Tourine for Attitude, with an additional 20% of purchased grapes for this line.

Over the years, Pascal Jolivet has developed a real style for his wines, very identifiable by its purity and elegance. The idea is to follow a process of “organic vinification”: after a very light settling, the fermentation of the juices is carried out with indigenous yeasts, and the aging on the lees plays a fundamental role in the concentration and complexity of our wines. The process is extremely natural and the very long fermentations make it possible to sustainably nourish and stabilize the wines by using very low doses of sulphur.

Pascal Jolivet‘s Sancerre is a blend of wines from various soils: 50% limestone, 30% clay-limestone, and 20% flint. The grapes are hand sorted and lightly pressed in a gravity system. The wine from each plot is vinified separately before blending. As befits an excellent white wine, it can be aged for up to 10 years.

Since 2001, Pascal Jolivet has engaged with a particular terroir for his line Attitude. The idea was to create a high quality Loire collection from the Loire Valley, the best terroir in the world for the Sauvignon Blanc grape variety. Pascal Jolivet‘s dedication to this grape led him to a rich terrain in terms of history and heritage, near the gorgeous Châteaux of Cheverny and Chambord. Essentially composed of 5 plots, this vineyard has been expanded to over 30 hectares of limestone and flint since 2016. Attitude is the result of this engagement and of the natural know-how of Pascal Jolivet Domaine. Its identity and its originality give a unique style these Pascal Jolivet wines.
