
Pares Balta - Cava Brut
The history of Parés Baltà begins in the eighteenth century, when in 1790, the first vineyards were planted on the Parés Baltà estate, vineyards that still surround the manor house where the winery is located.
The old cava cellar was constructed in the beginning of the twentieth century, stone by stone. Located 10 meters underground with a natural and constant temperature of 14-15ºC, it is the perfect place for the aging of their cavas. The barrel room has all the small details to allow the wines to age under the most favourable conditions, even during the warmest summers.
All the wines of Parés Baltà are made with grapes that grow on their five estates, located between 170 and 700 m above sea level, and a few kilometres from the Mediterranean Sea, Barcelona, and the beautiful village of Sitges. The wide variety of soils and microclimates enjoyed by the estates allows Parés Balta to make a wide range of wines.
All their wines are made starting with a common denominator: biodynamic viticulture, the most respectful type of agriculture that exists, and one that guarantees grapes of the highest quality: healthy, balanced, and tasty. With them, Parés Baltà creates some of the most authentic and expressive wines of the Penedés Designation of Origin.
This environmentally conscious approach to farming is paired with minimal intervention winemaking, which starts with harvesting each plot only when the grapes have reached their optimal state of ripeness. It continues in the cellar with minimal use of added sulfites, no chemical additives to stabilize or maintain the wine (they use temperature instead), minimal filtering and only when it is absolutely necessary, and they use only containers that do not affect the flavour of the wine.
Parés Baltà vinify their sparkling wine according to the traditional or Champenoise method, with a second fermentation in the bottle. Parés Baltà makes a wide range of long-aged cavas, some of which are aged in the cellar for up to 100 months.
Additionally, Parés Baltà wines are vegan and certified organic.
