
Jaume Serra - Castelfino Cava Brut
Jaume Serra is situated at the top of a slope that gently descends towards the Mediterranean Sea in the town of Vilanova I La Geltru, half way between Barcelona and Tarragona. Its origins go back to 1647 when El Padruell was built, a walled estate that since the 17th century has offered protection to a farm. Legend has it that it used to have a passage that connected it straight to the village.
In 1943 Don Jaume Serra Güel established a company with his name in Alella, Catalonia. In 1956, the Rato family bought El padruell, and in 1975, they bought Don Jaume Serra Güell. In 1984, they decided to move the winery to Vilanova I La Geltru and began the construction of the new winery and the planting of the vineyards. Finally, in 1997, Jaume Serra was acquired by the García Carrión family.
The current winery is surrounded by a plot of lands of 125 hectares of vineyards that are planted with Cabernet Sauvignon, Merlot, Tempranillo, and Chardonnay. The winery is able to process 5M kg of grapes, with a total production of about 20M bottles a year. Aging takes place in 3,500 American and French oak barrels. Their underground cellars can hold 60M bottles for aging.
By law, Cava must be made in the traditional method and must age for a minimum of nine months on its lees before release. Jaume Serra takes the additional step of importing their yeast from Champagne, France, to impart the finest quality to their Cavas.
