The little town of Matelica is in the Marche region, just east of Umbria. This region produces fine, mineral wine from the Verdicchio grape. It is also grown (with rather different results) around the town of Jesi, nearer Ancona and the Adriatic. Acid is a word that needs to be thoughtful about when writing about wine, but the acidity of this wine is what makes it so lively and distinctive, and so good with food.
ColleStefano is based in the small appellation of Matelica at 450m, near the mountain town of Castelraimondo on the border with Umbria. The Marchionni family purchased Collestefano and have been making wine from organic grapes since 1995, with Fabio Marchionni taking lead since 1998.
